Joy of Cooking’s Carrot Cake Recipe – Repurposed for Allergy Free

NO Egg, Soy, Sugar, Wheat (Gluten Free), Corn, Pineapple, Canola Oil, Dairy, Coconut, or Yeast

Carrot Cake

Set all ingredients at room temperature, 68 to 70 degrees.
Preheat oven to 350 degrees. Grease and flour two 9×2 inch round pans or two 8×8-inch pans or one 13×9 inch pan or line the bottoms with parchment paper.

No Wheat, Dairy, Soy, Corn, Egg, Sugar, Yeast, Pineapple, Coconut or Canola Oil

Whisk together thoroughly in a large bowl:
1/3 cup teff flour
1/3 cup brown rice flour
1/3 cup garbanzo bean flour
1/3 cup tapioca flour
1 1/2 tsp baking soda
1 tsp baking powder (corn free)
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp allspice
1/2 tsp salt

Add and stir together well with a rubber spatula or beat on low speed:
1/3 cup of honey
1/3 cup of agave
1/3 cup of xylitol
2/3 cup of olive oil
2 bananas
2 tbsp of arrowroot powder

Stir in:
1 1/2 cups finely grated peeled carrots
1 cup finely chopped pecans
1 cup raisins

Scrape the batter into the pans(s) and spread evenly.  Bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes in round or square pans, 30 to 35 minutes in a 13×9 inch pan. Let cool in the pan on rack for 10 minutes.  Slide a thin knife around the cake to detach it from the pan(s). Invert the cake and peel off the paper liner(s), if using.  Let cool right side up on the rack.

Frosting:

Mix Organic Palm Oil Spread mixed with Agave Nectar – until desired amount and taste are achieved.

I made up this recipe today and was quite pleased at the results – it was moist and delicious. Taste was a little bit of a cross between a carrot cake and banana bread, the nutmeg was perhaps a little on the strong side, so if you’re not a huge nutmeg fan use less.  Hope you enjoy.

ImageWhen baking, my first source for recipes is always the Joy of Cooking, however, given the long list of ingredients that I have to work without to accomodate everyone’s allergies, no recipe is ever as is.  One of the toughest for substitution is egg, especially in cakes.  So I’ve done quite a bit of research on egg substitutes.
I really like Ener-G Egg Replacer or Potato Milk
, but both contain potato and my youngest is allergic.
Applesauce has also worked well for me, but yet again youngest can’t have it.
Milk is also good but the only milk everyone in my house can drink is rice, and rice milk is not a great egg substitute.
So here is my top 10 list of egg replacers (equivalent is per egg):
  1. Ener-G Egg Replacer
  2. Milk (Cow, Goat, Soy, Potato) (150 ml per egg)
    Condensed milk works too – use a half-tin condensed milk for every 2.5 cups of flour in the recipe
  3. Bananas (1 banana per egg)
  4. Applesauce (created a dense and moist cake) (2 big tbsp)
  5. Egg Beaters
  6. Soy/Tofu  (1 big tablespoon soya powder w/2 tbsp water or 1/4 cup tofu)
  7. Arrowroot Powder (2 big tbsp)
  8. Potato Starch (2 big tbsp)
  9. Flaxseed   (1-2 tbsp ground flaxseed with 1 tbsp water heat until turns into egg like consistency)
  10. Corn Starch (2 tbsp)

I have found that mixing and matching often works well.  I just made a cake that called for 3 eggs, instead, I added two bananas and 2 tbsp of arrowroot powder. The cake came out beautifully!

I have been trying to decide what compost unit to buy for the last several months. We don’t have tons of room in our backyard, and I wasn’t sure how big of a composter I should buy do to our large family. I am feeling more and more confident that within the next year, we should be able to reduce our garbage (for a family of 6) to less than 1/4 of a 32 gallon can per week. So we could potentially go a whole month with only 1 can. At $3 per can for disposal, that is at least $100 garbage savings per year from our current spending. Not to mention the cost savings on not having to purchase top soil anymore!! Win Win…for my family and the planet.

If you get one let me know!! I’m interested to hear how much trash reduction people experience. This is cool for kids to witness as well. My son is stoked about recycling and composting.

Note: Sun Chips is expected to put out a compostable chip bag for next year. Excellent, eat chips then compost the bag. Much better plan than our current system. If you know of other companies doing biodegradable packaging, please post.

No one is perfect, remember this before you open your mouth or start typing to blast someone else for their short comings.  We are surrounded by people that need this message. I have personally experienced how forgiveness can free your heart of anger. Grace is given to those that forgive and love thy enemy.

Reasons to love your enemies
God commands us to love.
Here are some key Scriptures (Bible verses) on loving your enemies:

A new command I give you: Love one another. As I have loved you, so you must love one another (John 13:34).

But I tell you who hear me: Love your enemies, do good to those who hate you, bless those who curse you, pray for those who mistreat you (Luke 6:27-28).

Bless those who persecute you; bless and do not curse (Romans 12:14).

We work hard with our own hands. When we are cursed, we bless; when we are persecuted, we endure it (1 Corinthians 4:12).

Do not repay anyone evil for evil. Be careful to do what is right in the eyes of everybody. If it is possible, as far as it depends on you, live at peace with everyone. Do not take revenge, my friends, but leave room for God’s wrath, for it is written: “It is mine to avenge; I will repay,” says the Lord. On the contrary: “If your enemy is hungry, feed him; if he is thirsty, give him something to drink. In doing this, you will heap burning coals on his head.” Do not be overcome by evil, but overcome evil with good (Romans 12:17-21).

Do not repay evil with evil or insult with insult, but with blessing, because to this you were called so that you may inherit a blessing (1 Peter 3:9).

Anyone who claims to be in the light but hates his brother is still in the darkness. Whoever loves his brother lives in the light, and there is nothing in him to make him stumble (1 John 2:9-10).

By this all men will know that you are my disciples, if you love one another (John 13:35).

But what does it matter? The important thing is that in every way, whether from false motives or true, Christ is preached. And because of this I rejoice. Yes, and I will continue to rejoice (Philippians 1:18).

Jesus loved his enemies. Make him your example.
O Jerusalem, Jerusalem, you who kill the prophets and stone those sent to you, how often I have longed to gather your children together, as a hen gathers her chicks under her wings, but you were not willing! (Luke 13:34).

Hints to help you love your enemies
Realize that you may have misinterpreted the other person’s words.
He or she may be distracted.
He or she may be busy.
He or she may be going through a personal crisis.
He or she may be sick or exhausted.

Realize that you may be right: The other person may be your enemy.
However, if someone insults you or dislikes you, respond in a Christ-like manner. Don’t take things personally or give in to hurt feelings and let your emotions control you. Instead, see the other person as someone with a problem who needs God’s help and your prayers.

Determine what part you played in the problem.
You hypocrite, first take the plank out of your own eye, and then you will see clearly to remove the speck from your brother’s eye (Matthew 7:5).

See problems as opportunities to grow in Christ.
Not only so, but we also rejoice in our sufferings, because we know that suffering produces perseverance; perseverance, character; and character, hope (Romans 5:3-4).

Consider it pure joy, my brothers, whenever you face trials of many kinds (James 1:2).

That is why, for Christ’s sake, I delight in weaknesses, in insults, in hardships, in persecutions, in difficulties. For when I am weak, then I am strong (2 Corinthians 12:10).

Forgive . . . even if your enemy does not apologize.
Follow Jesus’ example: Father, forgive them, for they do not know what they are doing (Luke 23:34).

Follow Stephen’s example: Then he fell on his knees and cried out, “Lord, do not hold this sin against them.” When he had said this, he fell asleep (Acts 7:60).

Pray for your enemies.
When you feel irritated about someone:

Pray for the other person’s needs.
Pray that God will help you forgive.
Pray that God will help you love him or her.
Evaluate your love for your enemies
How well do you practice the following verses?
Love is patient, love is kind. It does not envy, it does not boast, it is not proud. It is not rude, it is not self-seeking, it is not easily angered, it keeps no record of wrongs. Love does not delight in evil but rejoices with the truth. It always protects, always trusts, always hopes, always perseveres. Love never fails (1 Corinthians 13:4-8).

Score yourself from 0-10 on each of the following.
“0″ means, “I need a lot of improvement.”

Only one day after Peta’s controversial letter was released to Ben and Jerry’s, more than 69 women replied on their blog site http://blog.peta.org/.  I agree with a number of women that posted – great letter to put our use of cow’s milk in check.  I see that Peta was trying to make a point.  I really don’t believe they were seriously suggesting that we farm human breast milk – the reality based on supply and demand is only feasible if we treated people in the US like some are treated in China (keep them in a factory and only pay them $0.25 per hour).  Could you imagine.  One cow could feed my family – but believe me, as a mom of three, I couldn’t feed everyone in my family unless that is all I did all day long – really now.

I appreciate Peta making the attempt to spark controversy in order to bring about awareness and a paradigm shift. Breast Milk is certainly best! And since it isn’t something in abundance, it should be reserved for the ones that need it most – human babies!! :-) As for the cows…well, Peta has a big job in front of them if they think they are going to stop American consumption of cow milk.  I personally live without it just fine.  But I’m one in a million ;-) haha

Burlington, Vt. - This morning, PETA dispatched a letter to Ben Cohen and Jerry Greenfield, cofounders of ice cream icon Ben & Jerry’s Homemade Inc., urging them to replace the cow’s milk in their products with human breast milk. PETA’s request comes in the wake of news reports that a Swiss restaurant owner will begin purchasing breast milk from nursing mothers and substituting breast milk for 75 percent of the cow’s milk in the food he serves. PETA points out to Cohen and Greenfield that such a move on their part would lessen the suffering of dairy cows and their babies on factory farms and benefit human health at the same time.

“The fact that human adults consume huge quantities of dairy products made from milk that was meant for a baby cow just doesn’t make sense,” says PETA Executive Vice President Tracy Reiman. “Everyone knows that ‘the breast is best,’ so Ben & Jerry’s could do consumers and cows a big favor by making the switch to breast milk.”

Dear Mr. Cohen and Mr. Greenfield,

On behalf of PETA and our more than 2 million members and supporters, I’d like to bring your attention to an innovative new idea from Switzerland that would bring a unique twist to Ben and Jerry’s. Storchen restaurant is set to unveil a menu that includes soups, stews, and sauces made with at least 75 percent breast milk procured from human donors who are paid in exchange for their milk. If Ben and Jerry’s replaced the cow’s milk in its ice cream with breast milk, your customers–and cows–would reap the benefits.

Using cow’s milk for your ice cream is a hazard to your customer’s health. Dairy products have been linked to juvenile diabetes, allergies, constipation, obesity, and prostate and ovarian cancer. The late Dr. Benjamin Spock, America’s leading authority on child care, spoke out against feeding cow’s milk to children, saying it may play a role in anemia, allergies, and juvenile diabetes and in the long term, will set kids up for obesity and heart disease–America’s number one cause of death.

Animals will also benefit from the switch to breast milk. Like all mammals, cows only produce milk during and after pregnancy, so to be able to constantly milk them, cows are forcefully impregnated every nine months. After several years of living in filthy conditions and being forced to produce 10 times more milk than they would naturally, their exhausted bodies are turned into hamburgers or ground up for soup.

And of course, the veal industry could not survive without the dairy industry. Because male calves can’t produce milk, dairy farmers take them from their mothers immediately after birth and sell them to veal farms, where they endure 14 to17 weeks of torment chained inside a crate so small that they can’t even turn around.

The breast is best! Won’t you give cows and their babies a break and our health a boost by switching from cow’s milk to breast milk in Ben and Jerry’s ice cream? Thank you for your consideration.

Ready or not, some day it will all come to an end.

Humans certainly are imperfect. Our government is run by human, thus imperfect. Here is another example of pharmaceutical power at work.

In the US we are told it is mandatory that we go for immunizations – which cause fatalities (while low they do exist). The FDA supports this. However, we have natural cures like supplements, vitamins, minerals, and foods with much safer gentler effect on our immune systems and yet the FDA steers clear of any claims of overall health benefits. We don’t mandate a good balanced diet with good balanced exercise and good hygiene – but they attempt to mandate immunizations – which are highly profitable pharmaceuticals.

This brings me to the topic of Colloidal Silver (CS) as a general over the counter cure all treatment. I was introduced to CS four years ago when my son was an infant and kept getting an eye infection because his tear duct hadn’t opened yet. Instead of repeated antibiotic, my (traditional yet homeopath) doctor advised that I try Colloidal Silver drops for my son’s eyes. Wow…quick results. It worked great. So great, that my husband and I tried it whenever we had a stuffy nose, soar throat, or ear pain. After a while we used a little here and a little there anytime we noticed a sign of illness. It was amazing. Granted my son stayed at home and wasn’t exposed to lots and lots of germy kids on a daily basis, but overall we stayed quite healthy. He was only on antibiotics two or three times in his first 3 years of life. We use it like Airborne – a preventative antidote. For us, six misting sprays up to one tablespoon will usually do it (3x daily as needed). Our favorite brands are listed below.

The naysayers…I remember reading information about Colloidal Silver and argyria a skin condition where you turn blue. However, when I looked into this further it was amazing to me to find that Colloidal Silver was used for many many years as a cure all and all the reports that I found on argyria were from people taking lots and lots of homemade CS on a daily basis. The amount people with argyria have taken is obscene compared to the amount recommended on the products I have used – a little goes a long way (see below a quick recap of the mere 11 cases that have been reported).

Hmmm…homemade and over consumption – well no wonder. Haven’t we learned that even good things in excess aren’t good. I would not recommend you make vitamins, minerals, and supplements in your home (unless you really know what you’re doing). I would recommend that you purchase from a reputable vendor that has extensive research on their product and follows good safety and purity standards – then follow their dosage recommendations.

So far, only eleven cases of argyria related to silver products have been reported and all seem to be from excessive use:
* A 56-year-old man who had sold and used colloidal silver for three years, developed blue/gray discoloration of his fingernails accompanied by a very high blood level of silver [1].
* A married couple who had three years of daily consumption of a drink prepared by administering an electrolytic charge to a bowl of water that contained a silver bar [2].
* Another couple had been taking a silver-containing “dietary supplement” prescribed by a naturopath [2].
* A mentally ill man who had been drinking silver-containing herbal tea for about 10 months [2].
* Stan Jones, Montana’s Libertarian Party candidate for the U.S. Senate, who reportedly started taking colloidal silver in 1999 for fear that Y2K disruptions might lead to a shortage of antibiotics. He made his own concoction by electrically two silver wires in a glass of water [3].
* Two men, ages 63 and 76, developed argyria after a year of product use inspired by Internet claims [4].
* A 16-year-old boy developed blue-gray pigmentation of his entire body after ingesting a silver-containing dietary supplement for a year. The product, packaged so that it was identical to bottled water. was touted as a preventive for everyday infections [5].
* A 58-year-old man who treated a presumed kidney infection with a home-brewed colloidal solution 12 times a day for 4 days developed argyria about 4 weeks later [6].
* A 38-year-old man developed argyria after ingesting approximately 16 ounces of 450 ppm colloidal silver three times a day for 10 months to treat his arthritis and other conditions. He made the solution with a simple battery-operated chamber that leached silver from pure silver wire. He had obtained the plans from information on the Internet [7]. The photograph to the right shows how his skin color compares to that of normal skin.

I laugh or else I’d cry…what ever are we doing…please I urge you read this information and pass it on. Educate yourself and others on the risks and side effects of vaccines. Understand what is in them and how they effect the body, before you blindly allow health care practitioners to pump dose after dose into your body or the body(ies) of your small children. Know what your rights are – they are there for a reason! You do have a choice – make the right one for you and your family! I’m not completely against vaccines – I just believe that everyone should have a choice and should educate themselves to make the best choice for their situation.
